Happy St. Patty's

I'm not much of a corn beef hash, lamb, or shepherd's pie kind of gal. So, we do the whole green thing around here. I don't use artificial food coloring either. Simple pureed spinach is our green goo.
Here's what we had for breakfast...
3 eggs
3 TBSP parmasean cheese
1/4 cup spinach puree
salt
pepper
