Go Green


In honor of St. Patrick's Day here is a green recipe, free of any artificial coloring!

"Chloro-phul" Pasta (get it?) Makes 4-6 servings

Ingredients:
1/2 pound whole wheat spaghetti (or you could use spinach pasta for extra festive-ness)
1 bunch kale
1/2 head broccoli
2 TBS olive oil
Salt, pepper, and chili powder to taste
1 clove garlic
1/4 cup white grape juice
1/2 cup 1% milk
1 TBS flour
5 oz Asiago cheese
1/2 cup low sodium chicken broth
Chicken or shrimp (optional)

Preparation:
1. Bring 1 pot of water to a boil. Cook pasta.
2. Meanwhile heat a non-stick skillet sprayed with non-stick spray.
3. Chop broccoli and kale. Add olive oil to medium-high skillet when heated. Add chopped veggies and saute for 3-4 minutes. Add chopped garlic, salt, pepper, and chili powder. Saute another 2 minutes. Add in frozen shrimp or cooked chicken if using, cook through. Transfer to a bowl.
4. Add white grape juice to deglaze the pan. Add in flour and milk and whisk together. Bring to a simmer. Add back to the pan the veggie mixture and the cooked pasta. Add in cheese and mix together. Lastly, add chicken broth to thin out.
