Homemade Chicken Nuggets


Good for kids, fine for adults. My husband wasn't to fond of the breading choice, but I told him not to compare these to Chick Fil A. The little ones didn't seem to mind. I liked the extra crunchy texture. Whole wheat bread crumbs would work too.

Ingredients/procedure:
4 Shredded wheat biscuits *pulse in food processor. Place in a bowl.
1 pound chicken
2 TBS fresh chives, chopped
1 TBS minced garlic
salt and pepper
1 egg
*Combine all these ingredients into a food processor and pulse until combined.
1 egg, beaten
1 cup flour
*Place egg in one bowl and flour in another. Line up the three bowls of flour, egg, and processed shredded wheat.
Using a melon baller, scoop out the chicken mixture on to a plastic cutting board. Take one chicken ball at a time and place in flour, then egg, then wheat. Flatten and mold in in "nugget" shape. Repeat. Makes about 20 nuggets.
Bake at 350 degrees for 15 minutes.
Serve with oven roasted broccoli.
*Clean and chop broccoli. Spread on a cookie sheet and drizzle with olive oil, salt, and pepper. Roast at 350 degrees for 15-18 minutes depending on the texture you prefer. We like ours with a bite.
Dip in honey dijon sauce.
*Combine equal parts honey and dijon. Don't serve to your baby : )
