These slightly sweet muffins are perfect for a grab and go breakfast or a midmorning snack. Cherries are in season now, enjoy!
Ingredients:
2 cups fresh cherries
1 cup ground oats
1 1/2 cups whole wheat flour
1 1/4 tsp baking soda
1 tsp cinnamon
3/4 cup milk (any)
1/2 cup honey
1 egg2 TBS canola oil
1 tsp vanilla
Preheat oven to 350 degrees. Spray mini muffin tin. Wash, pit and chop the cherries. Slightly pulse in food processor. Set aside. Combine dry ingredients in a medium bowl, set aside. Mix wet ingredients. Add dry ingredients to wet ingredients. Mix to combine. Fold in chopped cherries. Scoop dough into mini muffin tin. Bake for about 10 minutes. Let cool.
I'd like to tell you exactly how many this made, but my almost 4-year-old opened one of the tubberware containers and started chowing down. Then, the rest of us had some for breakfast. I'm thinking it was between 3 and 4 dozen!
