As the month of September concludes, I will leave you with one of the tasty, produce-packed meals that we have enjoyed recently. All the veggies came from our organic CSA veggie share.
{grilled corn on the cob, steak*, tomatoes with cottage cheese, sauteed kale, spaghetti squash with homemade pesto}

Spaghetti Squash with homemade pesto:
Cut squash in half, remove seeds and bake at 350 degrees for 50-60 minutes.
Pesto:
1 bunch basil
1/4 cup pistachios
1/4 cup fresh parmesean
1 clove garlic
salt and pepper
Extra virgin olive oil
*pulse all ingredients in the food processor (except oil). While the food processor is running, slowly drizzle in the olive oil. Add just enough to combine.
Using a fork scrape the squash to remove the flesh. Place in a bowl and stir in the pesto. Season with salt and pepper.
