Sunday Morning


Pumpkin Pancakes with Earth Balance and Pure Maple Syrup

1 cup whole wheat pastry flour
2 tsp baking soda
1 TBS sugar or honey
1/2 tsp salt
1 cup skim milk
1 egg
2 TBS canola oil
1/2 cup pumpkin puree
1/4 tsp cinnamon
1/4 tsp nutmeg

Combine all ingredients. Coat a large non-stick skillet with cooking spray. Spoon 1/4 cup batter for each pancake. Cook about 2-3 minutes per side.
