What's for lunch?


Bean and Cheese Burrito
...or doggy bones. My three-year old will have more fun eating that way!
Makes 6
6 whole wheat tortillas*
1 can black beans
1/2 cup chicken or veggie broth (reduced sodium)
3 TBS pureed veggies (I used butternut squash because I had just made baby food)
Pepper to taste
Garlic Powder
1/2 cup shredded sharp cheddar cheese (Tillamook)

Combine beans, broth, veggies, pepper, and garlic powder in a medium sauce pan. Bring to a boil. Turn off heat and puree using an immersion blender. Add in cheddar and stir until melted. Place about 3-4 TBS of mixture at the end of a tortilla and roll. Make all at once and freeze, then you can just pop it in the microwave for 1-1.5 min. Would be easy to transport for school lunch too.

* I like La Tortilla Factory 100% whole wheat tortillas, small. Why? No PHO, 6 grams of fiber, tastes great (hard to find for "healthy tortillas).
