Shredded Chicken Tostados


Makes 6 tostados

Ingredients:

6 chicken tenders

1 can diced tomatoes, organic

1 cup chicken broth, organic

2 cups water

2 tsp chili powder

6, 6 inch corn tortillas

Cooking spray

½ bag coleslaw mix

¼ cup low fat, plain yogurt

¼ cup organic salsa

2 tsp garlic powder

1 cup shredded Tillamook cheese

1 avocado, diced

Preparation:

1. Add chicken tenders, tomatoes, chicken broth, water, and chili powder to a sauce pan. Boil for 15-20 minutes or until chicken is cooked through.

2. Meanwhile, preheat your oven broiler. Spray a cookie sheet with cooking spray and place the tortillas on. Spray the tortillas with cooking spray. Set aside.

3. Combine the coleslaw mix with the yogurt, salsa, and garlic powder in a small bowl. Set aside.

4. Bake the tortillas about 1-2 minutes per side, or until crispy.

5. When the chicken is done, remove from pan with slotted spoon. Aiming to get some tomatoes. Shred the chicken.

6. Assemble the tostados by layering the crispy tortilla with the chicken, shredded cheese, coleslaw, and diced avocado.

7. Enjoy with your hands or a knife and fork.
