Was our meatless meal for the week.
Ingredients:
Wonton Wrappers
1 large portobello mushroom
1 garlic clove, minced
2 tsp extra virgin olive oil
1 cup cottage cheese
salt and pepper
Parmesan cheese
Preparation:
Dice mushrooms. Heat olive oil in a skillet, add garlic. After a minute add the mushrooms. Cook on medium until cooked through. Add to a food processor. Add in cottage cheese and salt and pepper. Process.
Place wonton wrappers on your counter and place a small teaspoon of the filling into each. Fold in half and seal with a wet finger. Add to boiling water. When they float to the top, they are finished.
Serve with a drizzle of extra virgin olive oil and freshly grated Parmesan cheese.
We enjoyed ours with sauteed organic asparagus.
