As the month of September concludes, I will leave you with one of the tasty, produce-packed meals that we have enjoyed recently. All the veggies came from our organic CSA veggie share

{grilled corn on the cob, steak*, tomatoes with cottage cheese, sauteed kale, spaghetti squash with homemade pesto}
*more to come on the steak

Spaghetti Squash with homemade pesto:
Cut squash in half, remove seeds and bake at 350 degrees for 50-60 minutes.
Pesto:
1 bunch basil
1/4 cup pistachios
1/4 cup fresh parmesean
1 clove garlic
salt and pepper
Extra virgin olive oil
*pulse all ingredients in the food processor (except oil). While the food processor is running, slowly drizzle in the olive oil. Add just enough to combine.
Using a fork scrape the squash to remove the flesh. Place in a bowl and stir in the pesto. Season with salt and pepper.

Nutrition and Exercise

I haven't really stepped into the realms of exercise on this blog. Mainly, I don't have a degree in exercise...that is crossing the line. I get perturbed when those with fitness expertise give out nutrition advice. Ethically they shouldn't. Plus, it takes a lot of hard work to become an RD and maintain that status.
Anyway, I haven't felt moral about posting exercise info until now. I recently became certified to teach level one mat and equipment Pilates classes (more to come on that), and I will continue to get certified through level four. Yay!

So, when it comes to weight loss which is more important...diet or exercise?

Here is a stat:
According to the National Weight Control Registry 89% of individuals who lost 30 pounds or more AND KEPT IT OFF (this is the hard part) did so with a combination of diet AND exercise.
10% succeeded with just diet
1% succeeded with just exercise
*these two stats tell you how important your diet is

BOTH are important, but I believe most people think they can exercise their bums off and eat whatever they want. Your nutrition is 70% your exercise is 30%.

But before you give up on exercise because it appears to not be as important, read this:
"In the bottle before you is a pill, a marvel of modern medicine that will regulate gene transcription throughout your body, helping you prevent heart disease, stroke, diabetes, obesity, and 12 kinds of cancer - plus gallstones and diverticulitis. Expect the pill to improve your strength and balance as well as your blood-lipid profile. Your bones will become stronger. You'll grow new capillaries in your heart, your skeletal muscle, and your brain, improving blood flow and the delivery of oxygen and nutrients. Your attention span will increase. If you have arthritis, your symptoms will improve. The pill will help you regulate your appetite, and you'll probably find you prefer healthier foods. You'll feel better - younger, even - and will test younger according to a variety of physiological measures. Your blood volume will increase, and you'll burn fats better. Even your immune system will be stimulated. There is just one catch: There is no such pill. The prescription is exercise."
- Jonathan Shaw, "The Deadliest Sin" Harvard Magazine March-April 2004

Stay tuned for my thoughts on exercise and a {difficult for me task} I have decided to embark upon!
